No-Bake Cookie Dough Protein Bites

Description

Delicious, satisfying No-Bake Cookie Dough Protein Bites that taste just like classic peanut butter cookie dough and are packed with protein.


Ingredients

Scale
  • ½ cup (128g) creamy natural peanut butter or cashew butter
  • ¼ cup (80g) honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup (40g) unflavored protein powder
  • 3 tablespoons (18g) oat flour, plus more as needed
  • 1 tablespoon flaxseed meal
  • 3 tablespoons mini chocolate chips
  • Flaky sea salt, for sprinkling

Instructions

  1. In a large bowl, combine all ingredients except the chocolate chips and sea salt. Mix until a thick cookie dough forms. If too wet, add more oat flour, 1 tablespoon at a time.
  2. Fold in the chocolate chips (hands work great here).
  3. Scoop and roll dough into balls and place on a plate about 1 inch apart.
  4. Sprinkle lightly with flaky sea salt, if desired.
  5. Chill in the refrigerator for 1 hour before serving.

Notes

These bites can be stored in an airtight container in the refrigerator for up to 1 week, or frozen for up to 2-3 months. Allow frozen bites to soften slightly before eating.
