Description

These Glazed Cherry Pie Bars feature a soft, buttery shortbread-style base with sweet cherry pie filling and a simple almond-scented glaze, making them crowd-friendly and perfect for parties.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • ½ teaspoon salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (or up to ½ teaspoon if desired)
  • 3 cups all-purpose flour
  • 2 (21-ounce) cans cherry pie filling
  • 1¼ cups confectioners’ sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 23 tablespoons milk

Instructions

  1. Preheat oven to 350°F. Spray a 15×10×1-inch jelly roll pan with cooking spray.
  2. In a large bowl, beat butter, sugar, and salt until light and fluffy (about 3 minutes).
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in vanilla and almond extracts.
  5. Gradually add flour and mix until just combined.
  6. Spread about 75% of the dough evenly into the pan.
  7. Spread cherry pie filling over the dough, leaving a ¼-inch border around the edges.
  8. Drop remaining dough in small spoonfuls over the filling.
  9. Bake for 35 minutes, until lightly golden.
  10. Cool completely in the pan on a wire rack.
  11. Whisk confectioners’ sugar, vanilla, almond extract, and milk until smooth.
  12. Drizzle over cooled bars, slice, and serve.

Notes

Almond extract is potent; adjust the amount based on preference.
