Description
Simple, flaky, and perfectly fall-inspired, these Easy Apple Blossoms are hand-held apple pies filled with tender spiced apple chunks and topped with a dreamy caramel drizzle. Great for brunch, dessert, or a cozy fall lunch treat!
Ingredients
Crust
2 cups All-purpose Flour
2/3 cup Unsalted Butter (cold, cubed)
1 tbsp Granulated Sugar
1 tsp Kosher Salt
7 tbsp Cold Water (divided: 3 tbsp + 3 tbsp + 1 tbsp, ice-cold)
Spiced-Apple Filling
2 Medium Apples (Granny Smith, Cortland, or Honey Crisp), peeled and diced
3 tbsp Brown Sugar
1 tsp Ground Cinnamon
1 tbsp All-purpose Flour
Pinch of Salt
Juice of 1/2 Lemon (for preventing browning)
Assembly
1 Egg (large)
1 tsp Water
1 tbsp Turbinado Sugar (for topping)
2 tbsp Apricot Jam + 1 tbsp Water (optional glaze)
Topping
1/3 cup Caramel Sauce (optional, for drizzle)
Instructions
1. Peel, core, and dice the apples. Toss with lemon juice, brown sugar, cinnamon, flour, and a pinch of salt. Set aside.
2. In a food processor, pulse flour, sugar, and salt. Add cold butter and pulse until mixture resembles pea-sized crumbs.
3. Add 3 tbsp ice-cold water and pulse 4–5 times. Repeat with the next 3 tbsp, then 1 tbsp, or as needed, until dough forms.
4. Form dough into a ball, wrap, and refrigerate for at least 30 minutes (preferably 1 hour).
5. Roll out dough to 1/8″ thick on floured surface. Cut into 6” circles.
6. Slice 6–8 flaps around the edge of each circle to help fold. Add 1 tbsp of filling to center of each.
7. Brush edges with egg wash. Fold up flaps to enclose the filling, overlapping slightly.
8. Brush again with egg wash and sprinkle with Turbinado sugar. Refrigerate again for 30 minutes.
9. Preheat oven to 400°F (375°F convection). Bake for 35 minutes or until golden brown.
10. Optional: Brush with apricot glaze for shine. Drizzle with caramel before serving.
Notes
If dough is too dry, add more ice water 1 tbsp at a time.
For the flakiest crust, ensure the dough stays cold at all stages.
You can glaze blossoms with apricot jam to add shine, or skip for a rustic finish.
Use firm, tart apples for best results—Granny Smith, Cortland, or Honey Crisp.
