Red Velvet Cheesecake Swirl Brownies

If you’ve ever been torn between a fudgy brownie and a slice of creamy cheesecake, this dessert is about to solve that problem in the most indulgent way. These red velvet cheesecake swirl brownies are rich, dramatic, and downright irresistible. They have that classic red velvet flavor—slightly chocolatey, subtly tangy, and perfectly sweet—paired with ribbons of smooth cheesecake swirled right through the top.

This is the kind of dessert that feels special the moment you cut into it. The deep red brownie base peeking through creamy white swirls makes every square look bakery-worthy, and the texture is pure comfort. Dense but soft brownies, creamy cheesecake, crisp edges, and a melt-in-your-mouth center. They’re perfect for holidays, Valentine’s Day, potlucks, or anytime you want a dessert that looks impressive without being complicated.

Tips for Perfect Results

These brownies are easy to make, but a few small details really elevate them.

  • Use room-temperature cream cheese. This is key for a smooth cheesecake swirl with no lumps.
  • Don’t overmix the brownie batter. Once the flour goes in, fold gently. Overmixing can make brownies tough instead of fudgy.
  • Reserve a little brownie batter. Saving a few tablespoons for the top helps create a more dramatic swirl.
  • Swirl gently. The layers are thick, so don’t worry about perfection. A simple figure-eight motion with a knife is enough.
  • Watch the bake time. Every oven is different. The brownies are done when a toothpick comes out clean or with just a few moist crumbs.
  • Cool completely before slicing. This makes a huge difference in clean edges and
  • defined layers.

Red Velvet Cheesecake Swirl Brownies

  • Author: not just recipe
  • Total Time: 45 minutes
  • Yield: 8 Servings 1x

Ingredients

Scale

2 large eggs :

1/2 cup (8 Tbsp; 113g) unsalted butter

1 cup (200g) granulated sugar

2 teaspoons pure vanilla extract

1/4 cup (21g) unsweetened cocoa powder

1/8 teaspoon salt

1 and 1/2 teaspoons red gel food

Coloring :

3/4 teaspoon white vinegar

3/4 cup (94g) all-purpose flour (spooned & leveled)

Cheesecake Swirl :

8 ounces (226g) full-fat brick cream cheese, softened to room temperature

1/4 cup (50g) granulated sugar

1 egg yolk

1/2 teaspoon pure vanilla extract Cook Mode Prevent your screen from going dark

Instructions

1. Preheat the oven to 350°F (177°C). Spray an 8-inch square baking pan with nonstick spray. Set aside.

2. Make the brownie layer first: In a small bowl, beat the 2 eggs together. Set aside. Melt the butter in a large microwave safe bowl in 30 second increments until melted. Stir in 1 cup sugar, 2 teaspoons vanilla extract, cocoa powder, salt, food coloring, and vinegar. Mix each of those ingredients into the batter in that order. Whisk in the eggs, then fold in the flour until completely incorporated. Do not overmix. Pour the brownie batter into prepared baking pan, leaving about 3-4 Tablespoons for the top.

3. Make the cheesecake swirl: With a handheld mixer on medium speed, beat the softened cream cheese, 1/4 cup sugar, egg yolk, and 1/2 teaspoon vanilla in a medium bowl until completely smooth—about 1 minute. Dollop spoonfuls of the cream cheese mixture on top of the prepared brownie batter. Cover with the last few Tablespoons of brownie batter. Glide a knife through the layers as best you can (both layers are pretty thick), creating a swirl pattern.

4. Bake the brownies for 28-30 minutes or until a toothpick inserted in the middle comes out clean. Allow the brownies to cool completely before cutting into squares. Cover brownies and store at room temperature for 3 days or in the refrigerator for up to 6 days

Variations and Serving Ideas

These brownies are stunning on their own, but they’re also easy to customize.

  • Extra chocolate: Sprinkle mini chocolate chips over the brownie batter before swirling.
  • Holiday twist: Add festive sprinkles on top after baking for Valentine’s Day or Christmas.
  • Mini version: Bake in muffin tins with liners for individual brownie-cheesecake cups.
  • Elegant dessert: Serve slightly chilled with a dollop of whipped cream or a drizzle of chocolate sauce.
  • Party platter: Cut into small squares and arrange on a tray—these disappear fast at gatherings.

They’re especially beautiful on a dessert table, where that red velvet color really pops.

Storage and Make-Ahead Tips

These brownies are just as practical as they are delicious.

  • Room temperature: Store covered for up to 3 days.
  • Refrigerator: Keep in an airtight container for up to 6 days. They’re especially good chilled.
  • Make ahead: Bake the day before serving for the best texture and flavor.
  • Freezing: You can freeze sliced brownies for up to 2 months. Thaw overnight in the fridge or at room temperature.

If you like extra-clean slices, chill the brownies before cutting and wipe the knife between cuts.
